To make this easy. New instance(with latest gpu) starts depreciating but the services it powers is sold for $150. Old instance (with 3 year old gpu) doesn’t just depreciate, it’s still powering services sold for $120. Depreciating isn’t real cuz they’re making money for x years down the line. It’s just accounting talk, not real economic value.
